I am a whole foods vegan who is learning to cook without using refined flour, sugar, or oil.  I’m also thinking about limiting salt, but I’m not sure what I believe about that yet.

To understand why I choose to eat this way, check out these books.

If you want to understand what system I use to shape my diet, check out Jeff Novick’s lectures (dvds) on Calorie Density and Reading Food Labels.  Also check out this post on Dr. Klaper’s nutritional recommendations.

I also want to share this article from Jeff Novick’s facebook page about how you can even get trapped when you are eating whole foods vegan!  Adding a small handful of nuts to a salad is generally okay, but making vegan truffles that are all dried fruits and nuts can be addicting and destructive for your diet if you are trying to lose weight.  He makes some important distinctions about how to use foods that are higher in salt, sugar, or fat.
